3 Sweet Vegan Breakfast Toasts (That Don't Involve Avocado)

I'm back with more toasts (that aren't avocado based) because I'm obsessed now. I knew I was going to do a sweet one when I came up with the idea for savory toasts, but I really and honestly think I have so many more coming. Me and husband inhaled these toasts and if you're following me on my personal Instagram, you'll see that there's a few I've remade several times.

Fig Ricotta Toast


This one honestly shocked me how much I liked it. I mean, all the things separately are great, but together, I wasn't so sure. But honestly? Wow. So good! I suggest using fresh figs, which I wasn't able to get in time for this shoot, but did use at a later date. I also used Nicole's tofu ricotta recipe (scroll to the bottom of the post) again, but omitted the onion, garlic, parm, and parsley.


Ingredients:

- your favorite bread

- vegan ricotta

- figs

- maple syrup

- basil, chopped

- salt


  1. Toast your bread.

  2. Spread your desired amount of ricotta across the toast.

  3. Slice your figs, then spread them along the toast however you'd like. Drizzle with maple syrup and salt. Chop up the basil and add that on top.

 

Peanut Butter and Banana Toast


This one is real simple, but maybe you've never thought of it because, hey, it happens! Chocolate and peanut butter is a classic, so I had to do it. Hershey's Simply 5 chocolate syrup is accidentally vegan, so that's what I used here!


Ingredients:

- your favorite bread

- peanut butter

- sliced banana

- chocolate drizzle

- cinnamon

- salt


  1. Toast your bread.

  2. Spread your desired amount of peanut butter over the toast.

  3. Slice your banana and lay it over the peanut butter. Drizzle chocolate syrup over the bananas, then sprinkle cinnamon and salt.

 

Strawberry Balsamic Toast


Not gonna lie, this is my favorite and I feel like a fancy bitch eating it. This felt like something I would pay $12 for two slices of at a fancy restaurant. You've gotta make this one. It's mandatory. I used Tofutti cream cheese because it's my fave.


Ingredients:

- your favorite bread

- vegan cream cheese

- sliced strawberries

- balsamic glaze

- coconut shreds

- mint, chopped


  1. Toast your bread.

  2. Spread your desired amount of cream cheese over the toast.

  3. Slice your strawberries and place them on the cream cheese. Drizzle your balsamic glaze, then sprinkle coconut shreds and your chopped mint!
